Transitioning from stacks of paper to just one device that could fit endless notes is no longer a new concept. Not only is this practice more environmentally and spatially sustainably, it is also highly convenient for workflow during the work-from-home era resulted from CoVid-19.

Digital note taking allow much more flexibility: you can type, hand-write, draw, snip lectures, insert medias, annotate, and even collaborate with colleagues on contributing inputs and giving feedbacks on documents.

You can try a number of these features with OneNote. As a side note, an assistant digital pen is not necessary for creating good notes, but consider investing in one if you decide to do digital note taking for the long haul. 

Last but not least, digital note taking is not limited to school and work, so feel free to create your portable diaries, recipe collections, movie marathon lists etc. The options are endless.
